Banana Cookies

Servings: 12 mid/ Safeway sized cookies


  • 1 well mashed banana (roughly 1/3 cup or 62g)

  • 1/3 cup softened butter (75g)

  • 1 tbsp yogurt (can use sour cream, I used low fat yogurt)

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

  • 5 tbsp brown sugar (57g)

  • 5 tbsp sugar (53g)

  • 1/8 tsp baking soda

  • 1/8 tsp baking powder

  • 1 cup flour (130g)

  • 2 tsp cornstarch

  • Optional: 1 tbsp thick Peanut Butter, 1 tbsp Nutella spread


Step 1: Preheat oven to 350 degrees Fahrenheit.


Step 2: Separate Peanut Butter and Nutella into 6 small portions and freeze momentarily..


Step 3: Combine butter, banana, yogurt, vanilla, and both sugars.


Step 4: Add salt, cinnamon, baking soda, and baking powder to the mixture.


Step 5: Separately whisk cornstarch and flour together.


Step 6: Combine both mixes, divide into 12, refrigerate for half an hour.


Step 7: Remove everything from the fridge and freezer.


Step 8: create a divit in the middle of each ball of dough. Place either Peanut Butter or Nutella in each.


Step 9: Place on baking sheet and bake 10 to 14 minutes.
