Confetti Cake Cookies

Servings: 12 mid/ Safeway sized cookies or 24 small (roughly 1" in diameter)


These cookies use both butter and olive oil to hone a texture that reminds my sister and I of the confetti cake pops we could never get right. Sometimes, I make a batch of minis to keep around as a sweet treat when I'm not looking for anything too filling. They can also be made small enough to turn into a kind of cereal.


  • 1/2 cup softened butter

  • 2/3 cup granulated sugar

  • 5 tbsp powdered sugar

  • 5 tbsp olive oil

  • 2 tbsp sour cream

  • 1 tsp almond extract

  • 1/4 tsp salt

  • 1/4 tsp baking soda

  • 1/4 tsp cream of tartar

  • 1 egg

  • 2 3/4 cup all-purpose flour

  • Sprinkles measured to preference

  • White chocolate chips measured to preference


Step 1: Preheat oven to 350 degrees Fahrenheit.


Step 2: Combine softened butter with sugars, baking soda, cream of tartar, and salt.


Step 3: Add olive oil, sour cream, and almond extract. Mix till combined.


Step 4: Beat egg into mixture.


Step 5: Add flour in three increments till combined.


Step 6: Bake for 10 to 12 minutes (depending on oven), turning pan halfway through for even bake.
